Cypriot Roasted Chicken and Potatoes

One of my favorite comfort meals is “ψητό” (psito). It is a roast, typically consisting of chicken or other meat, roasted in the oven with potatoes. It is a typical Sunday family meal in Cyprus and in Greece. There are different variations of how this roasted chicken and potato meal is prepared depending on which region of Greece or Cyprus you are from. In Cyprus, this meal is typically made with chicken, potatoes, and onions roasted in olive oil and crushed tomatoes, and seasoned with cinnamon and lots of black pepper. This is the version I grew up eating, and the version I personally love

Cypriot roasted chicken and potatoes is a delicious and fragrant one-pan dinner that is so easy to prepare. A staple in every Cypriot household, this meal requires minimum preparation, one pan, and is sure to please everyone around the dinner table!

Cypriot Roasted Chicken and Potatoes Recipe Ingredients

Let’s go over the ingredients used in this one-pan chicken recipe.

  • Chicken: Traditionally a whole chicken is used in this meal. You can leave the chicken whole, or cut it into quarters, which is how I prefer it. If you don’t know how to quarter a chicken, watch this quick video from Bon Appetit. You can also butterfly the chicken, or use bone in chicken breasts or thighs. 
  • Potatoes: To make this chicken dinner authentic, we should be using Cypriot potatoes, which are famous for their delicious flavor. I cannot find Cypriot potatoes in the United States, so gold potatoes are the closest substitute.
  • Carrots: The carrots are optional but they add a great taste and color to the dish.
  • Onion: Use a yellow onion and make sure that you slice it finely.
  • Olive Oil: Olive oil: Use a good neutral Greek olive oil for the best flavor.
  • Tomatoes: You can use fresh or canned tomatoes in this recipe. If you are using fresh tomatoes, run them through a blender or food processor to slightly crush them. If you are using canned tomatoes, use crushed unsalted tomatoes.
  • Cinnamon: Cinnamon gives this chicken and potato recipe the classic Cypriot flavor. The cinnamon pairs so well with the sweet tomatoes and black pepper.
  • Black pepper: Use freshly cracked black pepper for the best flavor.

How To Make One-Pan Roasted Chicken and Potatoes

This recipe for Cyprus-style Chicken and Potatoes is sooo easy to make! Let’s go through the steps to make sure you end up with the perfect chicken roast.

  1. Prepare the ingredients. The first step in this easy chicken dinner recipe is to prepare all of the ingredients. Cut the potatoes, carrots, and finely slice the onion. If you are using a whole chicken, cut it into quarters, butterfly (spatchcock), or leave it whole.
  2. Place ingredients in your baking pan. Next, add the potatoes, carrots, and onions to your baking pan. Make sure that you use a large enough baking pan so that all of the vegetables are arranged in a single layer. Make wells where you will be placing the chicken, and then add it to the pan. 
  3. Add olive oil, tomatoes, and spices. Drizzle the olive oil over all of the ingredients. Then, add the crushed tomatoes and top with cinnamon, black pepper, and salt. Use your hands (or two large spoons) to mix everything together. Make sure that all of the potatoes and chicken are coated with the oil/tomatoes.
  4. Roast. Place the baking pan into a preheat oven and roast for 1 hour, or until the chicken is cooked through and the potatoes are fork-tender. Check the internal temperature of the chicken before removing from the oven.
  5. Serve. Serve while hot.

Ingredients 

  • 1 4-5 pound chicken without giblets, quartered*
  • 1 1/2 pounds gold potatoes cut into wedges
  • 2-3 medium carrots sliced (optional)
  • 1 large yellow onion thinly sliced
  • 1/4 cup olive oil
  • 1 cup 8 oz crushed tomatoes, canned or fresh
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon black pepper
  • salt to taste

Instructions 

  • Preheat oven to 400 degree F.
  • Add the potatoes, carrots, and onions to your baking pan. Make sure that you use a large enough baking pan so that all of the vegetables are arranged in a single layer. Make wells where you will be placing the chicken, and then add the chicken to the pan.
  • Drizzle the olive oil over all of the ingredients. Then, add the crushed tomatoes and top with cinnamon, black pepper, and salt. Use your hands (or two large spoons) to mix everything together. Make sure that all of the potatoes and chicken are coated with the oil/tomatoes.
  • Place the baking pan into the preheated oven for 1 hour, or until the chicken is cooked through and the potatoes are fork-tender. Check to make sure the internal temperature of the chicken has reached 165 degrees F before removing from the oven.
  • Serve hot.
