1/2 cup sugar + 2 tbsp chopped candied ginger + 1 lemon wedge, for rim (optional)
Add sugar, pomegranate juice, and ginger in a small heavy bottomed saucepan. Bring to boil, over medium heat, then simmer for 30 minutes, or until mixture gets syrupy and slightly thickens. Remove from heat and let the syrup cool completely.
To assemble drinks, use a lemon wedge to rim glasses. Dip glasses into sugar and candied ginger.
Add 2 tablespoons of the pomegranate syrup to each glass. Top with chilled prosecco and a tablespoon of pomegranate seeds.
