Spicy Green Goddess Halloumi Sandwich.
It’s a lunch comes together in ten minutes and it’s healthy and delicious. Don’t you just love when healthy things can involve grilled halloumi?!

Then comes the spicy green goddess spread. It is made with lots of fresh herbs, jalapeno, lemon juice, avocado, and Greek yogurt. This stuff is eat-with-a-spoon worthy.
So, you slather one side of the bread with the green goddess spread, then layer on the power greens, grilled halloumi, and cucumber.
Top with another slice of bread and lunch is served.
TIP: If you also want lunch for tomorrow, make 2 sandwiches and store the second one in wax paper or plastic wrap in the fridge. It tastes just as good the next day!

Spicy Green Goddess Spread
- 1/2 avocado
- 1/2 small jalapeno, seeds removed
- 1/4 cup Greek yogurt
- 1/4 cup dill
- 1/4 cup mint
- 1/4 cup parsley
- 1/4 cup basil
- 1 clove garlic
- 1 scallion
- 1–2 tbsp lemon juice
- salt, to taste
- 8 slices bread
- 8 slices halloumi
- 1 cup power greens
- 1 small cucumber, sliced
- In a food processor or blender, add all the green goddess spread ingredients. Process until smooth. Set aside.
- Heat a large skillet over medium heat. Once hot, add the halloumi slices and cook for 1-2 minutes per side, or until golden. Remove from skillet and set aside.
- Spread 1/4 of the spread on one slice of bread. Layer with power greens, 2 slices grilled halloumi, and sliced cucumber. Top with second slice of bread.
- Repeat with remaining ingredients.
