Thermomix Blueberry Flax Muffins

Blueberry Flaxseed Muffins - a delicious and easy recipe that freezes well!

These Thermomix Blueberry Flax Muffins are moist, fluffy, and wholesome, with crispy tops. This will be your new favorite breakfast or snack!

Ingredients

2 oz (57 g) butter, room temperature

3 3/4 oz (106 g) light brown sugar

2 eggs

2 tsp vanilla

6 oz (170 g) buttermilk

8 1/2 oz (241 g) flour

3 tbsp (25 g) flaxmeal

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

8 oz (226 g) blueberries

coarse sugar, for topping

Instructions

Preheat oven to 375 degrees F. Line a 12-cup muffin tip with muffin liners and set aside.

Add butter, sugar, eggs, vanilla, and buttermilk to mixing bowl and mix 1 min / speed 3. Add flour, flaxmeal, baking powder, baking soda, and salt and mix 30 sec / speed 5. Use the spatula to fold in blueberries.

Scoop about 1/4 cup of batter into the prepared muffin tin. Sprinkle about 1 tsp of coarse sugar on top of each muffin. Bake for 25-30 minutes, until the tops are light golden brown and a toothpick inserted into the center of a muffin comes out clean.

Remove the muffins from the oven, and after 5 minutes transfer them to a wire rack to cool.
