To make the cupcakes, beat together the sugar and eggs until pale, thick, and creamy.
With the mixer on low speed, drizzle in the oil until it is fully incorporated.
Alternately add the dry ingredients and the remaining liquid ingredients to the batter (beginning and ending with flour mixture) in 3 different additions until combined. Pour the batter in a cupcake pan and bake.
To make the frosting, beat cream cheese and butter until light and fluffy.
