Salted Maple Pecan Pie Energy Balls (no bake)

These no-bake Salted Maple Pecan Pie Energy Balls are made with real, whole ingredients and in less than 10 minutes! (gluten free, paleo, vegan)

Ingredients 

  • 1 cup pitted Medjool dates about 13-15
  • 1 cup pecans
  • 1/2 cup unsweetened shredded coconut plus 1/3 cup for rolling
  • 1 tbsp maple syrup
  • 1 tsp sea salt

Instructions 

  • Place all of the dates, pecans, 1/2 cup shredded coconut, maple syrup, and salt in a food processor. Process for 1-2 minutes until mixture comes together.
  • Place extra coconut in a bowl and set aside.
  • Roll the mixture into 12 balls. Roll balls in coconut and refrigerate 30 minutes before serving.
  • To make in a Thermomix, place all ingredients (except extra coconut) in mixing bowl and blend 10 seconds / speed 7.

Notes

You can either store your Salted Maple Pecan Pie Energy Balls in the fridge or freezer. They will last in an airtight container in the fridge for up to 2 weeks or up to 3 months in the freezer.
