Delicious Fluffy Cottage Cheese Protein Pancakes made in a blender with only 5 simple ingredients - the perfect post workout breakfast!

Ingredients 

  • 3 eggs
  • 1 cup cottage cheese
  • 1 tsp vanilla
  • 1 cup whole wheat pastry flour
  • 2 tsp baking powder
  • maple syrup and berries for serving

Instructions 

  • Add all ingredients to a blender and blend until smooth.
  • Heat a nonstick skillet over medium heat and lightly grease with oil. Drop ¼ cup batter per pancake and cook 1 minute per side.
  • Enjoy with your favorite toppings!
