Oatmeal Chocolate Chip Cookie Bars

These Oatmeal Chocolate Chip Cookie Bars are soft, chewy and loaded with lots of chocolate chips. Super easy to make in under 1 hour and require just one bowl and a few pantry ingredients.

Equipment

Ingredients 

  • 1/2 cup butter melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 1/4 cups old fashioned oats
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chip
  • flakey sea salt for topping (optional)

Instructions 

  • Preheat oven to 350 degrees F. Line an 8 x 8 - inch pan with parchment paper overhanging the sides.
  • In a large mixing bowl, whisk together melted butter and sugars. Beat in egg and vanilla extract.
  • Add the oats, flour, baking soda, and salt. Mix until combined. Fold in chocolate chips, reserving a few to sprinkle on top.
  • Transfer the mixture to the prepared baking pan and smooth into an even layer. Top with reserved chocolate chips.
  • Bake for 25-30 minutes. Remove from oven and allow to cool for 30 minutes before using the parchment paper to lift out of the pan. Cut into 8 or 16 bars and enjoy!

Notes

  • Storage: Store any leftovers covered in an airtight container at room temperature. Oatmeal chocolate chip cookie bars will stay fresh for about 3 days.
  • Freeze: These bars freeze very well! Once they are completely cool, place the bars into a freezer safe container or zip top bag. Freeze for up to 3 months.
  • Bake in a 9x13-in pan. To bake this recipe in a 9x13-in baking pan, simply double the quantities in the recipe. The baking time remains the same.
  • Serving the cookie bars. Once the bars are baked, I like to top them with a sprinkle of sea salt. You can serve them plain, or with a scoop of vanilla ice cream.
