These Oatmeal Chocolate Chip Cookie Bars are soft, chewy and loaded with lots of chocolate chips. Super easy to make in under 1 hour and require just one bowl and a few pantry ingredients.
Preheat oven to 350 degrees F. Line an 8 x 8 - inch pan with parchment paper overhanging the sides.
In a large mixing bowl, whisk together melted butter and sugars. Beat in egg and vanilla extract.
Add the oats, flour, baking soda, and salt. Mix until combined. Fold in chocolate chips, reserving a few to sprinkle on top.
Transfer the mixture to the prepared baking pan and smooth into an even layer. Top with reserved chocolate chips.
Bake for 25-30 minutes. Remove from oven and allow to cool for 30 minutes before using the parchment paper to lift out of the pan. Cut into 8 or 16 bars and enjoy!

Storage: Store any leftovers covered in an airtight container at room temperature. Oatmeal chocolate chip cookie bars will stay fresh for about 3 days.
Freeze: These bars freeze very well! Once they are completely cool, place the bars into a freezer safe container or zip top bag. Freeze for up to 3 months.
Bake in a 9x13-in pan. To bake this recipe in a 9x13-in baking pan, simply double the quantities in the recipe. The baking time remains the same.
Serving the cookie bars. Once the bars are baked, I like to top them with a sprinkle of sea salt. You can serve them plain, or with a scoop of vanilla ice cream.
