Ingredients

Prepare pomegranate ginger syrup

Add sugar, pomegranate juice, and ginger into a small heavy bottomed saucepan. Bring to boil, over medium heat, then reduce heat and simmer for 30 minutes, or until mixture gets syrupy and slightly thickens.

Assemble cocktail

Add 2 tablespoons of the pomegranate syrup to the glass. Top with chilled sparkling wine and a tablespoon of pomegranate seeds.
