CHOCOLATE CHIP CHEESECAKE RECIPE 1. Heat oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper. 2. Crush Oreos into fine crumbs. Mix with melted butter. Press into pan's bottom and sides. Bake for 10 minutes. 3. Put a large pan on oven's bottom rack. Boil water, then pour into the pan in the oven for steam.

4. Beat cream cheese until smooth. Add sugar, cornstarch, salt, then eggs and yolk one at a time. Mix in vanilla, heavy cream, sour cream, and chocolate chips. 5. Pour filling into crust. Bake over boiling water for 1 hour 10 minutes. It should jiggle slightly. 6. Turn off oven, open door slightly, and cool cheesecake inside for 1 hour. Cool more at room temperature, then in the fridge for at least 4 hours.
