Fluffy Cottage Cheese Protein Pancakes
- 3 eggs
- 1 cup cottage cheese
- 1 teaspoon vanilla
- 1 cup whole wheat pastry flour
- 2 teaspoon baking powder
- maple syrup and berries for serving
- Add all ingredients to a blender and blend until smooth.
- Heat a nonstick skillet over medium heat and lightly grease with oil. Drop ¼ cup batter per pancake and cook 1 minute per side.
- Enjoy with your favorite toppings!
