Fluffy Cottage Cheese Protein Pancakes
Ingredients
- 3 eggs
- 1 cup cottage cheese
- 1 tsp vanilla
- 1 cup whole wheat pastry flour
- 2 tsp baking powder
- maple syrup and berries for serving
Instructions
- Add all ingredients to a blender and blend until smooth.
- Heat a nonstick skillet over medium heat and lightly grease with oil. Drop 1/4 cup batter per pancake and cook 1 minute per side.
- Enjoy with your favorite toppings!
