Really though, I LOVE comfort food on rainy days.
This chili is so easy to prepare. You dump all the ingredients in a pot and let it simmer for 20 minutes. It really doesn't get any easier than that.
Not only is it so easy, but it's good for you too! Its packed with protein, fiber, and lots of nutrients.
Ground turkey is a leaner alternative to ground beef. Beans give the chili an extra boost of protein plus tons of fiber.
Sweet potatoes are rich in vitamin A (in the form of the antioxidant beta-carotene), vitamin C, vitamin B6, and potassium. They are also a good source of fiber and since they are have a low glycemic index, you wont have a blood sugar spike. Instead the sugars are slowly released into your blood stream so that you get a steady amount of energy (without a crash) and you will stay feeling full longer.
