Iโm bringing these pineapple chicken skewers to your house for dinner with lots of refreshing cilantro lime slaw. And maybe some brownies that are super fudgy and rich with vanilla ice cream because when you eat chicken on a stick and salad, there is plentyyyy of room for carbs.
Thereโs something special about putting pieces of chicken on skewers and then grilling it. Think about; you can put a piece of chicken, without cutting it up, with some sauce on a baking pan and stick it in the oven. Boring. Or, you can take the same chicken and sauce, cut into cubes, and pass it through wooden skewers and suddenly youโre boring old chicken dinner just became very interesting.
Yes, I like to keep my chicken dinners interesting because they can get very boring really fast.
Now letโs talk about this dinner. These skewers are basically summer on a stick.
Chicken thighs are cut into cubes and passed through skewers. Then, the chicken is brushed with a sweet and tangy and slightly spicy pineapple sauce and on the grill they go. Seriously, Iโm all about the charred pieces where the sauce slightly caramelizes. Its soooo good.
So. We cannot forget about the cilantro lime slaw. Itโs so refreshing & light and adds a delicious tangy coolness to the grilled skewers.

Grilled Pineapple Chicken Skewers with Cilantro Lime Slaw
A flavorful sweet-tangy-spicy sauce lends an amazing flavor to these delicious Grilled Pineapple Chicken Skewers. Paired with a refreshing Cilantro Lime Slaw, your summer dinner is ready in 20 minutes!
Ingredients
- 1/2 cup pineapple juice
- 1 tbsp rice wine vinegar
- 1 tbsp hoisin sauce
- 1 tbsp soy sauce
- 1 tsp hot sauce
- 1 tsp honey
- 2 cloves garlic minced
- 1 lb boneless skinless chicken thighs (cut into 1-inch pieces)
- 12 wooden skewers
Cilantro Lime Slaw
- 3 cups thinly sliced red cabbage
- 1/2 cup chopped cilantro
- 3 tbsp lime juice
- 2 tbsp olive oil
- 1 tbsp rice wine vinegar
- 2 tsp sugar
- 1/4 tsp salt
Instructions
- In a small saucepan, combine pineapple juice, 1 tbsp vinegar, hoisin sauce, soy sauce, hot sauce, honey, and minced garlic. Bring to a boil. Once boiling, reduce heat and simmer 5 minutes. The mixture should reduce and thicken slightly. Set aside 2 tbsp of the sauce.
- Preheat grill on medium high. Alternatively, you can cook the chicken under the broiler. Pass the chicken pieces through the skewers (about 3-4 pieces per skewer). Place skewers in a baking dish and brush with sauce. Grill 4-5 minutes on each side until done. Remove chicken from grill and drizzle with the sauce that was set aside.
- To make the slaw, combine cabbage and cilantro in a large bowl. In a small bowl, whisk together lime juice, oil, vinegar, sugar, and salt. Drizzle lime/oil mixture over cabbage and toss to combine.
