The best Paleo Sandwich Bread is made with just a handful of ingredients and will be in the oven in just 5 minutes! It is gluten free, grain free, yeast free, and low carb!

I don’t like sandwiches. Like really, really do not like them. If my only option is a sandwich and I am on the verge of hunger, I would rather be hangry and wait until I can get my hands on anything else than that sandwich.

BUT, give me a slice of bread and put some almond butter on it .. or a mashed avocado … or ummm a poached egg on top of it, and I will gladly eat it.

So, Paleo Sandwich Bread. This bread is gluten free, grain free, dairy free, yeast free, and low carb. Its also THE BEST Paleo bread I have ever tasted. Its delicious warm out of the oven, or toasted, and you can even make it into a sandwich.

Paleo Coconut Flour Sandwich Bread (gluten free, grain free, yeast free, low carb)

You only need few ingredients, and within 5 minutes you will have a homemade loaf of bread baking in the oven.

Ingredients 

  • 1 cup almond flour SHOP
  • 1/3 cup coconut flour SHOP
  • 2 tbsp flaxmeal SHOP
  • 1 1/2 tsp baking soda
  • 1 tsp aluminum-free baking powder
  • 1/4 tsp salt
  • 6 eggs
  • 1/4 cup avocado oil SHOP
  • 3 tbsp maple syrup or honey
  • 1 tsp apple cider vinegar

Instructions 

  • Preheat oven to 325 degrees F.
  • Grease a standard-size loaf pan and set aside.
  • In a large mixing bowl, add almond flour, coconut flour, flaxmeal, baking soda, baking powder, and salt. Whisk to combine.
  • Add eggs, oil, maple syrup, and apple cider vinegar. Whisk well until well combined.
  • Pour mixture into prepared loaf pan and bake 30-40 minutes.
  • Remove from oven and let cool in pan for 10 minutes. Remove from pan and cool.
  • Store leftover bread wrapped in the refrigerator for up tp 5 days.

  1. Any idea why this bread might bake up green with an ammonia smell? I tried two batches and it happened both times. The second time I bought all new ingredients just Incase. Has this happened to you?

    1. Hi Jenna! I have never had the bread turn green, but I did some research and found out that if you are using a baking powder with aluminum in it, it reacts to acidic ingredients like the coconut flour in this case and causes a greenish tint with a slight “metallic” flavor. It is 100% safe to eat even though it may look a little strange. To avoid the green color, I recommend to use a non-aluminum baking powder like Bob’s Red Mill or Rumford.

  2. I made this today and its my new favorite bread! So delicious!! Im trying to not feel guilty for wanting to eat the whole thing in 1 day and was just wondering if you had the nutritional facts.

    1. Same….I’d love to see the nutritional facts.

      My family has but allergies, so I subbed sunflower seed flour in for the almond meal. It baked up beautifully!

    I am very picky with bread and although mine didn’t rise much, it was SO SAVORY!!! Every bite tasted like there was delicious butter all over it yet no dairy in the recipe at all. So hearty. Can’t taste a weird almond taste at all. Texture was moist and heavenly. This recipe is a keeper and would serve it to guests who aren’t used to gluten-free baking!! I’m drooling!!!!

    I’ve made this 3 times now, and it is a lifesaver for my daughter who is limiting her diet to try to determine food sensitivities. Right now she can’t have gluten, dairy, or any white foods like rice, potatoes, etc. I discovered if you separate out the egg whites and beat them until fluffy then fold them into the other ingredients, which have been thoroughly mixed, the loaf bakes up higher and lighter.

    Paleo bread is awful so I was prepared to hate it, but really do like this bread. Used olive oil, Mrs Dash salt replacement and Egg Beaters for eggs since that was all on hand and it was still very good. Cut easily into 10 pieces and holds together well. Froze a few pieces and it looks like it will toast well. Who knew? This actually is the best paleo bread I’ve had! Thank you so much!

    1. Hi, I haven’t experimented with any flaxmeal substitutes, but ground chia seeds will work. You can also try leaving out the flax all together and adding an extra 2 tbsp almond flour.

    1. Hi Judee, you can use a neutral tasting oil like canola, or sunflower, a light olive oil, or melted coconut oil if you want to keep it Paleo.
