Brownie Cookie Ice Cream Sandwiches

If you can’t decide between eating brownies or cookies for dessert, why not have both? These brownie cookie ice cream sandwiches are the perfect way to enjoy all of your favorite desserts at the same time, without adding too much extra prep work. That’s a win-win in my book!

Ingredients for Brownie Cookie Ice Cream Sandwiches

Let’s go over the ingredients you will need for this brownie cookie ice cream sandwiches recipe. Using high-quality ingredients is key to producing the best brownie cookie ice cream sandwiches!

 

  • Dark chocolate: Chocolate combined with cocoa powder in the cookies helps boost the flavor without altering the texture.
  • Butter: I always bake with salted butter because it does not have any added flavorings. If you use unsalted butter, add 1/2 tsp of salt to the batter. 
  • Light brown sugar: Use your favorite brand of brown sugar. This is the one that I use in all of my baking.  
  • Eggs: Room temperature eggs will give you the best results.
  • Vanilla extract: Always use pure vanilla extract (not imitation) for the best tasting baked treats!
  • Flour: I always use unbleached all-purpose flour in my baking. You can also use pastry flour or all-purpose gluten free flour with great results as well!
  • Dark cocoa powder: Use a high quality cocoa powder for the best tasting cookies. I prefer to use dark chocolate cocoa powder for a very chocolate-y taste and look, but regular cocoa powder works just as well!

  • Ice cream

How to Make Brownie Cookie Ice Cream Sandwiches

  1. Combine chocolate and butter. Melt the chocolate and butter in a double boiler. Set aside to cool slightly.
  2. Mix together the eggs, sugar and vanilla. In a large mixing bowl using a hand mixer or in the bowl of a stand mixer fitted with the whisk attachment, beat eggs with sugars and vanilla on medium/high speed for 5 minutes. 
  3. Add in the melted chocolate/butter mixture and mix until combined.
  4. Add in the remaining ingredients. Stir in flour, cocoa powder, baking powder, and salt.
  5. Drop cookies onto baking sheets. Use a medium sized cookie scoop to drop 1 ½ tbsp size balls onto the prepared baking sheets. You should be able to fit 12 cookies per sheet.
  6. Bake the cookies. Bake the cookies at 350 F for 12 minutes. Remove cookies from the oven and allow to cool completely on a wire rack.
  7. Cool the cookies. Once cookies are completely cool, place a large scoop of ice cream and sandwich it between 2 cookies. Freeze the sandwiches for 30 minutes.
  8. Dip the ice cream sandwiches in chocolate. Melt the chocolate chips in a double boiler. Dip the frozen ice cream cookie sandwiches into the chocolate and then sprinkle with topping of choice. Return cookies to the freezer until ready to eat.

Tips for Making Brownie Cookie Ice Cream Sandwiches

  • Slightly underbake the cookies if you want cookies that stay chewy and soft after freezing.
  • If you need to store any leftovers, wrap them individually in plastic wrap before freezing.
  • Do not add the ice cream until the cookies have completely cooled or else your ice cream will turn into a soupy mess.

Ingredients 

  • 1 ¼ cups 220 g dark chocolate, chopped
  • 10 tbsp 142 g butter, cubed
  • ¾ cup 165 g light brown sugar
  • ½ cup 100 g sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • ¾ cup 94 g flour
  • 3 tbsp 18 g dark cocoa powder
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 pints of your favorite ice cream
  • 1 ½ cups 260 g chocolate chips
  • ½ cup chopped nuts sprinkles, mini chocolate chips, crushed cookies, etc.

Instructions 

  • Preheat oven to 350 degrees F. Line two baking sheets with parchment paper. 
  • Melt chocolate and butter in a double boiler. Set aside to cool slightly.
  • In a large mixing bowl using a hand mixer or in the bowl of a stand mixer fitted with the whisk attachment, beat eggs with sugars and vanilla on medium/high speed for 5 minutes. 
  • Add in the melted chocolate/butter mixture and mix until combined.
  • Stir in flour, cocoa powder, baking powder, and salt.
  • Use a medium sized cookie scoop to drop 1 ½ tbsp size balls onto the prepared baking sheets. You should be able to fit 12 cookies per sheet.
  • Bake for 12 minutes. Remove cookies from oven and allow to cool completely on a wire rack.
  • Once cookies are completely cool, place a large scoop of ice cream and sandwich it between 2 cookies. Freeze the sandwiches for 30 minutes.
  • Melt the chocolate chips in a double boiler. Dip the frozen ice cream cookie sandwiches into the chocolate and then sprinkle with topping of choice. Return cookies to freezer until ready to eat.
